Lamb, sweet potato and olive tagine
I love eating tagines in Moroccan restaurants when travelling. Unfortunately, I can’t find the authentic version near me. So when I discovered that the Instant Pot can make tagines that taste like the real thing (in much less time), I decided to attempt it. While cooking , everyone kept commenting on the aroma that filled the house, and the final product was a big hit. My husband went as far as saying that it was better than those we’d eaten in the restaurants. ????
3 tablespoons olive oil
1 onion, sliced
500 g boneless lamb, cut into pieces
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon turmeric
1 teaspoon paprika
¼ teaspoon cinnamon
1 teaspoon harissa paste
1 tablespoon ground ginger garlic
2 tomatoes, cut in chunks
1 big sweet potato (or 2 small), cut in chunks
1 teaspoon lemon zest
a few strands of saffron
2 garlic cloves, chopped
500 ml beef stock
1 cup olives (i used the black ones)
Sliced almonds and coriander leaves for garnish
1. Make a wet rub with coriander, cumin, turmeric, paprika, cinnamon, harissa paste, ground ginger garlic and 2 tablespoons olive oil. Rub the meat with this paste.
2. Set Instant Pot to saute function. Saute onions in 1 tablespoon olive oil till soft and transparent. Remove and set aside.
3. Add meat to Instant Pot and saute it for about 10 minutes till browned.
4. Add onions, tomatoes, sweet potatoes, lemon zest, garlic cloves, stock, and saffron to the pot. Close it and set to pressure cook on high for 30 minutes.
5. When pressure cooking is done, unplug the Instant Pot and allow a 30 minute natural pressure release.
6. Once opened, reduce liquid with lid off if required. Add olives.
7. Garnish with toasted almonds and coriander before serving.
8. Serve with couscous, rice or pita. Enjoy.
Note: The dish was full of flavour and aroma. I was amazed at how tender the meat and potatoes turned out, in such a short space of time. And I’m bursting with ideas of new tagines to make in the Instant Pot. #tagine #instantpot #dinnerideas #southafricahalaal
