Chalokaawa- Mexican Tortilla Soup

A meal on its on, this super easy Mexican Tortilla Soup is everything you never knew you needed!
A perfect balance of flavour and texture from the hot fragrant tomato based soup, to the creamy indulgent
creme fraiche and of course the crunchy element of those baked tortillas! This to me is like drinking your chicken nachos or even better a Mexican Version of the ever popular Khowse.

1 tbsp olive oil
1 onion finely chopped
1 tsp cumin seeds
2-3 cloves garlic chopped
1-2 jalapeños/padrón peppers
1 tsp salt

1/2 kg chicken fillet

3 tomatoes finely chopped
1 tin black beans
1 tin sweetcorn kernels
1 tsp chili flakes
1 tsp coriander powder
handful of fresh coriander
salt to taste
Juice of 1 lime
Boiling water
2 tbsp chicken stock powder

2-3 tortillas cut into strips
2 tbsp olive oil

Condiments:

Grated Cheddar Cheese
Avocado cut into pieces
Creme fraiche/sour cream
Coriander
Salsa
Lime wedges
Chives
Tortilla strips

Heat olive oil in pot, add onions, cumin, garlic and chillies and salt.
Mix well. Once onions are sautéed add chicken fillet, tomatoes, black beans
and sweetcorn kernels, chilli flakes, coriander powder, fresh coriander, lime juice and salt.
Add enough boiling water to cover. Bring to a boil. Lower heat and allow to simmer.
Once chicken fillet is cooked, remove from pot and beat to shred in stand mixer using
paddle attachment. Add back to soup.

Toss tortilla strip in olive oil. Bake in oven until crispy.

To assemble:

Place soup in bowl
Sprinkle with grated cheese
Add avocados
Creme Fraiche
Coriander
Salsa
Lime wedge
Chives
and Tortilla strips!
