Cherry and almond biscotti has got to be one of the easiest treats to put together.. Granted, it does take some time to bake and dry out but it's nothing that can't be made in 2 hours.. For me, the difficult part lies in the waiting ????
I've used almonds this time but I've found pistachios work equally well.. Scroll down my feed for the pistachio, orange and cardomom biscotti recipe????

To make these, you will need:
●3 eggs
●1/2 cup castor sugar
●1 tsp vanilla essence
Beat until thick and creamy.

●Finely chopped red / green cherries
●2 cups almonds
●1 cup flour
Stir together and fold into egg mixture.

Pour mixture into a lined loaf tin and bake on 180°C for 30 minutes.
Cool for 30 minutes on a wire rack before slicing and then bake on 110°C for approximately 1 hour or until crispy and dry to the touch.
