Mi Ayam goreng (translates to chicken fried noodles)

This is so close to the real deal that you may assume you're in a cozy food joint in KL, welcomed by the kind words of Selamat datang (meaning welcome) . It may also evoke a strong sense of travel fever in you, simultaneously comforting you with the taste travel that we're so fortunate to experience through food. ❤️

We love the flavour of the range of @indomie_malaysia noodles.

I used a 514 recipe that I found on a recipe group, recipe credit to Ayesha Randeree and add these indo mie noodles. (hot n spicy or standard)
It's packed with flavour.

Mi Ayam goreng :
Chicken fried noodles :

Ingredients :
3 small to medium chicken fillet, sliced in strips
1 large onion sliced thick
3 tsp garlic
1. 5 tsp ginger
Robot peppers (I used 2 green peppers)
1 or 2 carrot ???? julienned
Mushrooms (optional)
3 packets Indomie MI goreng noodles (prepared and spiced)
1 tsp chilli paste (optional)
1 tsp green chilli (optional)
*omitted above chilli because indo mie MI goreng hot and spicy has all the heat.
Handful of cashews or roasted peanuts (measure this with your heart)
1/2 cup of soya sauce (use to your discretion)

Finely chopped coriander
Finely chopped spring onion

Method :
Prepare your noodles according to packet instructions and season with the package seasoning.
Saute onion until soft and translucent.
Add ginger and garlic and stir fry for a minute.
Add chicken, carrots, peppers and the remaining spices and stir fry.
Add soya sauce (add less if your brand is very salty)
Once cooked through to your preference, toss in the indo mie seasoned noodles and give it a quick stir fry.
You may add some cooked mushrooms.
Add your cashews / peanuts
Toss in some freshly chopped coriander and spring onions.

Tips: Depending on the salt content of your brand of soy sauce, you may add less.
These noodles can be purchased at most @picknpay in South Africa.
You may use any other noodles if you're unable to source this, but do adjust for seasoning (salt, chilli, stir fry sauce)
You could substitute the chicken (Ayam) for prawns (udang) and you will then have a MI udang goreng. #lunchinspo
