I made this quite a while ago, only got to post this now! Something delicious & different to our usual Rasmalai????

Take in a pot:
- 3 pints milk(1 pint is 2 cups, so in total 6 cups)
- 1/4 tsp Cardamom powder
- 3 tblsp sugar(or according to taste) or condensed milk .
- 3 heaped tablespoon rose syrup(I used the dias one)
- Pinch pink food colour .
*bring to boil on medium heat*

In a separate bowl/dish, take:
- 1 cup milk powder
- 3/4 tsp baking powder .
*mix well & make a soft dough with 1 egg(you might need less)*
Once done take 1 tsp soft butter & rub in the dough well ...
Rub hands with little ghee/butter, make very small ping pong balls, about 15 to 20(remember as they will puff up alot) ...
Once the milk starts to boil, lower the heat & continue boiling(don't boil the milk for too long).
Once the dough is done add the balls in the milk, close the lid & boil further on low heat for 7 to 10 mins.
The balls will puff up alot, they will flip themselves(if they haven't then slowly flip them, cook them for another 7 to 10 mins & be careful as they will be spongy)... Once you see the milk is starting to get thick, add in:
- Pinch saffron(optional)
- 2 heaped tblsp chopped/sliced Almonds
Switch off the stove & cool
Remove in a serving bowl & chill in the fridge. Sprinkle more nuts on top(optional) & dried rose petals/buds.
NOTE: {Make sure you're using a big flat pot for the balls to puff up nicely, don't use a deep pot, if they on top of each other, they won't puff up nicely}

Optional:
Once the ras malai is done, you can carefully remove the balls in your serving dish, then add in the milk 1 can nestle dessert cream & whisk with a hand whisk till combined.
