Vetkoek is a traditional South African fried dough bread. The vetkoek forms a part of South African culture. (Pronounced as ˈfetkʊk).
Balls of yeast dough are deep fried. Thereafter, split open and served stuffed with shredded meat or chicken filling. It makes for a great appetiser.

Ingredients for dough:
3 cups flour
1 teaspoon yeast
1 tablespoon sugar
1 teaspoon salt
1 tablespoon oil
Warm water to bind the dough
3 tablespoons softened butter
Method:
Mix the flour, yeast, sugar, and salt in a bowl. Make a well in the centre and pour in the oil along with the warm water to bind a shaggy soft dough. Transfer the dough to a clean work surface. Stretch it out. Add the softened butter and knead it till it’s nice, smooth, and elastic.
Cover and let the dough rise until double in size.
Lightly dust the work surface with flour. And portion out the dough. Roll in to smooth balls. Flatten slightly, then place it on to individual parchment paper pieces. Cover with a clean kitchen towel and let it proof for 20 minutes or until double in size.
Fry on medium low heat. Until golden brown. Cut with a knife, add your fillings, and serve warm.
Note: The dough may feel sticky when adding in the butter. But don’t be tempted to add dry flour. Keep kneading until the butter is well incorporated, and the dough is nice and smooth. The dough should bounce back up after you press it down with your finger.
CHICKEN FILLING
400g chicken fillet (cut into cubes)
1 tablespoon oil
1 tablespoon ground garlic
2 teaspoon chicken spice
1 teaspoon red chilli powder
Salt and pepper to taste
½ teaspoon sumac
½ teaspoon dry parsley
Mix all of the above and cook till chicken is tender. Add in fried potato cubes. Mix in 2 tablespoon mayo and 2 tablespoon peri peri sauce. You may add chopped parsley/coriander.
