Low Carb Pancake Cereal!

I have been wanting to try this since ramadaan, so yesterday I finally decided to make pancake cereal using my low carb pancake recipe. Little did I know that because I started so late I would end up having it for lunch ????

These tiny little pancakes took much more time than anticipated, if you want to teach yourself some patience... try this!

I did not have it with milk because I’m not a fan of soggy cereal, so soggy pancakes would be a huge no for me! A little tip is once you’re done making all them hundreds... put them back in the hot pan to heat up and toast a little!

I would normally have them with some maple flavoured xylitol syrup but I didn’t have any because it’s disappeared off the shelves so a little maple did the trick... note that even pure maple syrup is absorbed as sugar in the body so it would up the carb content of the dish, a little won’t hurt though...make your lifestyle work for you!

Also, is there a better combination than pure maple syrup and pancakes? I think not. Honestly, they were so good my mum kept snacking on them just as is... I actually prefer them to regular, and thoroughly enjoyed eating pancakes with a spoon! So so yum!

A little note, make sure your maple syrup is the real stuff and not just maple flavoured syrup, which would be just sugar with maple flavouring. Maple syrup does have a lower GI so while it’s still sugar, it would raise your blood sugar at a slower rate than sugar!

Recipe for the pancakes is in the pictures, just swipe... I used half of my recipe just for me. Double up as you need. Served with strawberries for some vitamins and a pat of butter because it’s a must!
