Middle Eastern spiced Shakshouka
A few years ago I had never even heard of Shakshouka, but this Middle Eastern dish is now so popular at home that it often makes its striking and hearty appearance, as a Sunday brunch, more times that I'm able to count.
I've dabbled with different versions, from the lovingly known tomato chutney version to a wholly embodied middle eastern version.
You know you've scored a winning version when the pan is wiped clean. My husband, who, by large is not a fan of tomato based dishes ended up scraping the remains of the sauce onto his naan bread.
This shakshouka has flavours of dukkah and zaatar and although each blend is made differently, and salt and spicing ratios vary with each brand, below is a pretty good guideline to use successfully.
Middle Eastern Shakshouka
The perfect Sunday brunch, or anytime meal.
Ingredients
2 heaped tsp dukkah
2 heaped tsp zaatar
1/2 tsp white pepper
1 tsp cumin powder
1 tsp paprika
1/4 tsp tumeric /arad/ haldi
1/2 tsp ginger paste
1/2 tsp garlic paste
1 tin tomato and onion mix (1/2 tsp ras AL hanout spice (optional) (avail at)) 1 tsp fennel seeds (saumph) (optional but highly recommended, especially if you're not serving it with naan bread) the fennel brings it all together ???? trust me on this. ????????
Salt to taste (approx 1 to 1.5 tsp fine salt) (dependant on your dukkah and zaatar blend)
Half a tin of chickpeas (roasted in a pan with some olive oil)
Method:
Process the tomato and onion mix in a processor until smooth.
Heat up a sufficient sized non stick pan with some ghee/butter/olive oil.
Add in all your spices and give it a good roast.
Add in your tomato and onion mix.
Simmer on low until water has evaporated. Approx 20min. Make round spacings in your sauce and carefully add one egg into each spacing.
Poach the egg in the sauce, on low heat for a few minutes.
Increase heat to medium and cook egg to your preference.
Garnish with sprinkles of zaatar and dukkah.
Scatter the chickpeas .
Served with thick slices of toasted naan bread that has been pre-buttered. Grill on a pan or toast in the oven
